With a background in operations reengineering, strategic planning and brand positioning, James Greco is a consultant and investor in the food manufacturing and restaurant industries performing interim and long term senior executive assignments. Mr. Greco has led multiple businesses most recently Newk’s, a next generation fast casual chain acquired by Sentinel Capital in 2014. He was engaged upon acquisition to accelerate growth and did so by developing a strategy, establishing systems and strengthening the management team. Sales, unit count and ebitda grew dramatically as a result. Prior to Newk’s Mr. Greco served as chief executive officer at Sbarro, one of the world’s leading Italian quick service restaurant concepts with over 1000 locations in 40 countries. He was recruited to provide leadership for the company’s turnaround. In this role, Mr. Greco created a strategy based on product improvement, brand revitalization and franchise development. Before joining Sbarro, Mr. Greco partnered with Sun Capital in 2003 to acquire Bruegger’s Enterprises, Inc. and served as chief executive officer until selling the company in 2011. While CEO, he engineered a successful turnaround, producing 20 consecutive quarters of positive same store sales and more than tripling ebitda. Upon the sale of Bruegger’s, ownership earned 13 times its investment. From 1996 to 2002 Mr. Greco was chief executive officer of Fieldbrook Farms, Inc., a $100 million manufacturer of private label ice cream and frozen desserts. While at Fieldbrook, he designed and executed a strategic plan to revive the company, doubling sales and increasing productivity. Prior to that, Mr. Greco was the chief operating officer of Natural Country Farms, Inc. a manufacturer of private label and food service fruit juices. Mr. Greco began his career in the practice of law, representing real estate and corporate clients. Mr. Greco is a member of the Connecticut and Florida bars. Current or previous board memberships include Fazoli’s Restaurants, Inc., Share Our Strength Restaurant Group, the Connecticut Food Bank, the Palm Beach County Food Bank and the International Dairy Foods Association. In 2009, Mr. Greco was named Operator of the Year, one of the industry’s highest honors awarded by Nation’s Restaurant News to a CEO for leadership. He is the author of several articles and a book chapter on management and leadership and is a frequent speaker at industry events. Mr. Greco earned a Bachelor of Arts in Economics from Georgetown University and a J.D. from the University of Miami School of Law. He has completed International Studies at City University, London, England.
